Our recipe of the day is a delicious, generous and easy to reproduce dish at hom : Neapolitan linguine. We will show you how to prepare this delicious meal, perfect for a nice dinner with your partner, family or friends.

List of ingredients:

  • Linguine Pasta
  • 1 aubergine
  • 150g peeled tomatoes
  • 2 cloves of garlic
  • 1 onion
  • 1 leek
  • Black olives
  • 15g of anchovies
  • 10 ml olive oil
  • 10g of parmesan cheese
  • Basil
  • Parsley
  • Salt
  • Pepper
  • Oregano
  • Coriander
  • Sugar

The Recipe:

  • On a board, finely chop the onions. Then clean and cut the leek into thin strips. Do the same with 3 olives in small slices. Finely chop the coriander, the anchovies and a piece of aubergine into strips.
  • In a saucepan with water, add salt and a dash of olive oil, then plunge the linguine pasta when the water is boiling, cook it for 10 minutes until it is "al dente".
  • In a frying pan, add a drizzle of olive oil and the garlic, onion, leeks and aubergine, leave to cook for a few minutes so that the repair has time to simmer. Add the coriander and peeled tomatoes and pour in the vegetable stock and olives. Add a teaspoon of sugar and the linguine. Mix well. Finally, add the anchovies. Grate the Parmesan cheese into a bowl.
  • For the presentation, place a lettuce leaf on a plate, add the linguine and the preparation and add some parmesan on top.

Tips:

The addition of sugar reduces the acidity of the tomatoes.

There are many variations on this Neapolitan sauce base. You can also add diced carrot and celery or a crumbled can of tuna.
